Can you say yummy! These babies are moist and soooo flipping good. I had two small pumpkins just sitting in my kitchen so last-night I baked them up and pureed them. With my fresh pumpkin puree I was looking for a quick recipe to use it in. I adapted this recipe from Nourishing Meals by Alissa Segersten & Tom Malterre, MS, CN. I changed it up with what I had in the cupboard. There is a Dairy Free Cream Cheese Frosting that can go with these. I just didn't have the sweet potatoes to do it (while my son was sleeping), next batch!!
