I love the summer time and this dressing reminds me of my childhood growing up on the farm. It reminds me of my grandma and her oh so good dressing. We would get fresh lettuce from the garden and she would whip up a special dressing and that is all we ate, lettuce and dressing. Last week I was looking at my garden and I had so much lettuce and arugula (not a bad thing I might say) and I thought I should whip up Grandma's Secret Salad Dressing. Then I realized it wasn't healthy plus I didn't have brown sugar in the house. So I looked to recreate it. Grandmas was mayonnaise (full of chemicals and food colouring), brown sugar (makes your blood sugar spike) and bread and butter pickle juice (read this about most pickles) .... no wonder I loved this as a kid. So my version was the juice from bread and butter pickles from Bubbies a much healthier choice, organic vegenaise ( I wonder how avocado would taste!?) and coconut sugar (won't spike your blood sugar). Still this is pretty sweet, so don't drown your salad, but it is one yummy treat. I need to whip it up next time I am back at my parents for my grandma and see if she will improve.
Equal parts coconut sugar and pickle juice with a 3rd of vegenaise. Stir or shake in a jar and enjoy!!
