These days with the Wee One eating solids and rolling all over the place, I don't have much time to make fancy meals, till today! This afternoon I made one heck of a healthy, yummy and sexy looking lunch. I had left over chicken from the night before and lots of veggies in the fridge. This is what I came up with; I was so pleased that I had to share. It has a little bit of everything.
For all my salads I try to use a dark green leaf as a base then add on. I didn’t add much today, mushrooms, hemp seeds and heirloom purple carrots. This is because the dressing I used was full of yummies. I had yams left from making the Wee One some baby food so that added a nice touch of colour and fiber to the dish. The red bell pepper was just staring me in the face wanting to be ate and the avocado was on its last day….. so good!
The healthy benefits of my lunch!
Yams - A good source of dietary fiber, potassium, vitamin C, manganese and vitamin B6.
Avocados - A healthy fatty food, full of fiber, Vitamin K, C, B5, B6, folate and more potassium then a banana.
Chicken - Yummy protein (chicken from my parents farm) organic or close to is always better.
Organic apple cider vinegar - Warming and detoxifying, also aids in digestion.
Extra virgin olive oil - Most of the fat in olive oil is monosaturated fat, which can help lower LDL " the bad cholesterol” and leaves the HDL "the good cholesterol" alone.
Red bell peppers - There are antioxidant benefits from these yummy puppies because they are loaded with Vitamin C, A and E which help grab free radicals within your body, also a good source of fiber.
Hemp seeds - Hemp seeds are full of omega 3’s and are highly digestible. They are bursting at the seams with calcium, iron and zinc. They have many anti-inflammatory properties as well.
Romaine Lettuce - Any dark leaf greens are good to get into your diet they are full of chlorophyll that will help enrich our blood.
Cremini Mushrooms - They help to detoxify as well and are a good source of protein, Vitamin B2 and zinc.
Heirloom purple carrots - Full of vitamin A, K and lots of fiber. Vitamin A is necessary for the health of epithelial tissue and laying down new cells which can help heal intestinal walls. It’s also an antioxidant and helps protect against free radicals.
Sea-zar Serenity Salad dressing --> Rawfoodz make some YUMMY salad dressings for the days I don't feel like making them myself. I find I don't put much on my salads when I use them because of all the goodness going on in the dressing itself.
Kombucha tea: Peach Resolution by Tonica. I cannot remember where I got this description from but I couldn't describe it any better myself.... "As the kombucha interacts with the tea base, a chemical reaction ensues and the Kombucha culture digests most of the caffeine and sugar in the tea base, breaking it down and converting it into an efficacious solution of detoxifying acids, living enzymes, minerals and vitamins C, B1, B2, B3, B6, B12 and B15." I served this tea at my wedding.
I threw this together and didn’t measure anything so just play with the taste.
