Over the weekend my husband, son and I went to a friends Christmas party. I love to go places or have people over for dinner and introduce something new to them (food wise), usually it's a super food, or a gluten free dish or dessert. I like to show healthy food can be delicious and simple, bonus part my son can have some too :)
I love chocolate, it's sort of an obsession so I figure healthy versions are the best route to take. Yummy Raw Cacao Cups seem to be the solution.
What is raw cacao you might ask, well to quote David Wolfe from his book Superfoods;
"All chocolate is made from cacao beans (also known as cocoa beans). Cacao is chocolate. All the antioxidant value, mineral benefits, neurotransmitter rejuvenating properties, and overall health-giving qualities of chocolate are found in original cacao."
There is only one ingredient which is cacao so always purchase it in it's raw form.
So Friday night I was poking around and found this recipe from the The Living Kitchen Wellness Group, I was about to make it and realized I didn't have cacao butter, but I did have coconut butter. Yummy! I added in a little coconut oil as well so it was a little runny after all the ingredients were melted. I was happy to use the blueberries me and the wee man picked in the summer with our friend Jamie and her little lady. Please Enjoy!
