The other night I was cutting green leafy lettuce from our garden and I felt really emotional. As a kid my grandma would have us cut lettuce and make this amazing salad dressing. I would sit down with a bowl the size of head full of lettuce, a few green onions and this dressing just dripping from the lettuce. I wanted to recreate it for my boys even though I'm trying not to eat any sugar but I put a healthy spin on it.
Grandmas was mayonnaise (full of chemicals and food colouring), brown sugar (makes your blood sugar spike) and bread and butter pickle juice (read this about most pickles) .... no wonder I loved this as a kid. So my version was the juice from bread and butter pickles from Bubbies a much healthier choice, organic vegenaise or avocado mayonnaise and coconut sugar (won't spike your blood sugar). This version is pretty sweet, so don't drown your salad, but it is one yummy treat.
Equal parts coconut sugar and pickle juice with a 3rd of mayonnaise . Stir or shake in a jar and enjoy!!
